Éric GoeuryThe Artisan Behind the Creations
Éric Goeury first studied culinary arts before developing a deep passion for artisanal baking. Driven by constant curiosity, he is among the first artisans in Canada to have dedicated himself to the craft of artisanal panettone.
His approach combines technical precision with creativity. Over the years, he has developed a family of balanced, indulgent and sometimes surprising recipes, always guided by the search for harmony between tradition and innovation.
An Artisanal Craft Guided by Time
Our Mother Sourdough
The heart of every creation, the mother sourdough sets the rhythm of production. Following its natural evolution requires precision and patience, but it is what gives panettone its subtle aromas and airy texture.
Crafting an artisanal panettone requires three days of work. During the final step, known as the inversion, the panettone is hung upside down to preserve its structure and lightness. The small hole visible at its base reflects the respect of this traditional technique.
Our House-Candied Fruits
All the fruits used in our panettones are candied directly in our facilities. This artisanal process spans nearly twenty days and requires daily attention.
We prioritize organic fruits, often sourced from local and seasonal agriculture, to deliver authentic and natural flavours.
What Is an Artisanal Panettone?
Originating from Italy and dating back to the Middle Ages, panettone sits somewhere between a brioche, a cake and a bread. Traditionally associated with festive moments, it is now reimagined by artisans who respect slow and natural production methods.
Unlike industrial versions, artisanal panettone relies on a delicate balance between richness and lightness. Controlled fermentation allows the dough to develop a regular alveolation, creating a soft, airy and tender texture.
