Homemade Candied Fruits

We have candied all the fruits present in our panettone using the traditional Italian method. This process lasts about twenty days and requires daily handling.It’s hard and demanding, but our fresh candied fruits are full of flavor!

The fruits chosen are imperatively organic, often from local and seasonal agriculture.

The Lievito madre

The Lievito madre (mother yeast) is the centrepiece of the panettone creation process, hosting aromas, the texture and preservation. Water, flour and Life within simply make a mother yeast like no other!
