For Viva Panettone, participating in the Panettone World Championship is not just a competition but also an opportunity to highlight the richness of Quebec’s terroir through unique creations. Anthony Daniele, co-founder of Italian origin, and Éric Goeury, culinary ambassador of Quebec maple, are thrilled to showcase their craftsmanship and the authenticity of their local ingredients on the international stage.
The History of the Panettone World Championship
The Panettone World Championship, founded by pastry chef Giuseppe Piffaretti, is a biennial competition reserved for professional bakers and pastry chefs. Over three days, the world’s best pastry chefs, who have passed regional selections, come together to share their passion for panettone and compete for the title of “Re del Panettone” (King of Panettone). Each participant must present six traditional Milanese panettones, weighing between 970g and 1030g each, with strictly defined ingredients: wheat flour, butter, egg yolk, sugar, raisins, candied lemon, arancini, honey, and vanilla. The use of dry yeast and pre-made products is prohibited. The next edition will be held in Milan in November 2024.
The competition focuses on excellence, the quality of ingredients, and mastery of natural fermentation techniques, essential elements for creating a panettone with a light texture and unique taste. Each pastry chef must adhere to strict criteria while bringing their personal touch, whether through local ingredients or innovative methods.
